Butcher’s Block 2×2 Bone-In Lip-On Ribeye is a primal rib. The vertebrae, chine bones, backstrap and blade cartilage are removed. The rib cap and blade meat are also removed. The fat on the ventral edge is beveled down to 1.5 inches above the bone.
